A fall or spring planted soft, white wheat variety grown by our neighbor Dean Cropper, who first had us over to try some pancakes fresh from his farm. He grabbed an armload of grain from his field, threw it in a bucket and threshed it right in front of us, then pulled out an empty kids' swimming pool and a leaf blower to winnow it! He then ground it on his kitchen counter in a Vita-mix blender along with an egg, milk, baking powder and a touch of salt and oil....and before long had a stack of the most impressively flavored pancakes....all in just 15 minutes!

Sonora wheat is a heritage, dryland type from the 1700’s. A soft (lower gluten) white wheat, known for its wonderful flavor, often used in tortillas, pasta, pastries and bread. Long ago, the Southwestern US and California were know as major wheat producers because of this variety. A genetically diverse, drought tolerant variety.
