Triticum turanicum
Spring planted. Similar to Durum, with much larger kernels, 2-3 times the size of modern wheats. An ancient variety that probably originated in the Fertile Crescent, very drought-tolerant. Prized for its high energy nutrition, easy digestibility, nutty/buttery taste, and firm texture. Higher in protein, and minerals than modern wheat. Some report that it is less allergenic.
